In Copenhagen, the kissa concept is being reimagined in an entirely new way as both a hi-fi bar and hi-fi café under the name bird.cph.
One name – two locations. Anyone looking to enjoy cool music, excellent coffee, and outstanding drinks in a superbly designed setting can head after 4 p.m. to Frederiksberg, just north of the Central Station, or visit earlier in the day in the heart of the city center between Amalienborg and Rosenborg castles. At both locations, bird. offers an unusual concept centered around enjoyment and lingering.
Originally, founder and owner Peter Altenburg had invited us for cocktails at the evening bar in Frederiksberg, but at the last minute redirected us to the downtown location, where his colleagues Harry Bell – multiple-time winner of Denmark’s Bartender of the Year award – and Australian-born DJ Ash Pederick, who oversees the music program, were already waiting for us.
We are greeted with a personal handshake, an open smile, and an invitation to explore, ask questions, and stay awhile. Over steaming cappuccinos, a long conversation unfolds about the bird. concept, and within the first few minutes of our visit it becomes clear that this is far more than just a stylish café with great sound or a cool bar with a strong atmosphere: it is a model of holistic hospitality that makes the space so remarkably inviting.
It quickly becomes apparent that this effortless atmosphere is supported by a high degree of curatorial ambition and acoustic sensitivity. Music is played on classic Technics 1210 turntables, chosen deliberately – not for retro appeal, but for their reliability and sonic precision under everyday operating conditions, a point that is particularly important to Ash Pederick, who can rightly be considered the musical mastermind behind the bars.
Yet more important than the playback equipment itself is what actually reaches the room. That task falls to specially developed speakers from Copenhagen-based manufacturer Arda Audio, which are not only tailored to the space and integrated almost invisibly, but have also been meticulously calibrated for the room’s acoustics. Combined with acoustically optimized wall panels and carefully selected materials, the result is a listening experience that settles over the room like a cushion of sound: present, warm, crystal clear – yet never intrusive.
And this is precisely where the Copenhagen kissa consciously and unmistakably departs from the classic kissa concept and its current wave of imitators: nothing here is retro, neither in the equipment choices nor in the interior design. From the loudspeakers to the seating, everything speaks the language of the 21st century; only the music remains deeply rooted in jazz.
This commitment to sonic quality and interior architecture extends far beyond technical considerations and finds its true expression in the musical curation that turns bird. into a place of active listening. Every month, Ash and his team establish a new musical focus – sometimes thematic, sometimes stylistic, sometimes emotional – which results in a curated selection of records available in the bar throughout the month.
Guest DJs, many locally rooted and others drawn from an international network, work from this curated foundation, interpreting and expanding it in their own way. The result is a sonic identity that remains consistent despite changing voices. The goal is not to educate or display expertise, but to create a space for musical inspiration where diversity and depth are not opposing forces but mutually reinforcing ones.
That jazz serves as the foundation is no coincidence – the name bird. is a tribute to Charlie “Bird” Parker – yet the bar’s musical identity is by no means confined to a single genre. Rather, jazz functions as an aesthetic and emotional framework upon which a wide variety of styles can unfold, from lo-fi and soul to electronic influences from the 1970s and 1980s.
What ends up in the glass follows a comparable philosophy. The cocktails are rooted in classical bar culture but avoid theatrics and unnecessary showmanship. Instead, the emphasis is on quality and clarity – not only in flavor, but in presentation. All drinks are pre-mixed, batched, and stored in advance so that no unnecessary noise is created during service.
The same principle applies to the coffee program: specially silenced equipment and pre-prepared ingredients ensure that operational sounds never interfere with the carefully considered sound environment.
What ultimately makes bird. so special is the way all these elements – spatial design, acoustic architecture, musical selection, warmth of hospitality, and bar culture – merge into a coherent whole. This is not an overdesigned concept polished by marketing finesse, but a place born from genuine conviction.
You can sense it in the enthusiasm and generosity with which we are welcomed – without anyone glancing at the clock – shown even the smallest details with pride, and drawn into long conversations about the music concept above all else.
Incidentally, the entire interior – from shelving to tables – was designed and built specifically for bird., custom-made by local designers who understand that space and sound are inseparable. The result is a venue that successfully combines sonic precision with social warmth, curatorial clarity with aesthetic openness, and Nordic design with the traditions of Japanese listening culture.
At a time when music is often reduced to the functional role of filling spaces without shaping them, that is truly remarkable.
